Pea and Mint Rice

A simple, fragrant rice dish with sweet peas and fresh mint, lightly spiced with Methi Blend. A great accompaniment to curries.

Pea and Mint Rice

Ingredients

  • 300g basmati or long grain rice
  • 150g peas, fresh or frozen
  • 10g mint, finely chopped
  • 1 tsp Methi Blend
  • ½ tsp salt

Method

  1. Cook the rice with 450ml water, 1 tsp Methi Blend1 tsp Methi Blend and ½ tsp salt in a covered pan for 10 minutes. Add the peas150g peas, fresh or frozen and cook for a further 5 minutes, or until all the water has been absorbed and the rice is cooked through.
  2. Fluff up the rice with a fork, then stir in the mint10g mint, finely chopped to serve.
